I’m planning to brew a West coast IPA soon and was wondering what is favored in the yeast department. I’m basing my recipe on a Scott Janish recipe and he uses WLP-002. I was planning to use 001, but figured I’d see what you all prefer and maybe try something else.

cellar science cali at 64 degrees

super super clean but doesnt hide the sweetness of the malt. i love it for hop forward west coast ales.

West Coast IPA is probably the beer style I've brewed more than any other and I've tried tons of different dry and liquid yeasts, but I just keep coming back to US-05. It's honestly my favorite for West Coast IPAs. It's a lot easier to use than other Chico variants such as White Labs's California Ale yeast or Wyeast's American Ale yeast, for example. There are some others I really like, but if I had to pick just one, it's US-05.

I try to have one on tap at all times, so brewed often. I've found that BRY-97 and Notty at 64* are clean fast and furious. I rack clear beer to keg in 14 days if needed. I like to let the beer in primary for 3 weeks or so. Ready to drink in 4 weeks, perfect at 6 weeks.

BRY97 for me, never liked US05 (might have to try it again, but on the other hand I’m only halfway through my brick of BRY97)

WLP001 California Ale Yeast for me.

I once did a split batch with WLP001 vs. BRY-97. Very similar but I felt the WLP001 had a fuller, rounder flavor, while the BRY-97 has a slightly thinner mouthfeel and drier finish (it attenuated down to a lower FG by a point or 2.).

But hey, everybody’s palate is different.

Cheers.

I like wlp002 a lot for wc ipas. You will want to mash fairly low (65c) to get 80%+ attenuation, but if you do it's a great choice.
I will also use bry97, of the various chico-related yeasts that is my favorite for hoppy beers.

I'm a big fan of Bell's yeast. I got a pack from their old homebrew store, and I've kept it going with overbuilt starters. It's a Chico strain, but I prefer the finish to US-05. Super vigorous fermentations, too
