Extract help for an American Wheat recipe.

I have a bit of a dilemma and am a relatively novice brewer.

I ordered this kit ( http://www.williamsbrewing.com/WIL ... P2470.cfm) from Williams and realized that wont be able to get the fermentation up to the temps that I want.

I've kicked around trying to use the extract for another use but Williams wont disclose what is in their extract when purchased from a kit.

They say it's pilsner and wheat malt. I've got 6 oz of amarillo, 1 oz of sterling and the 3 mystery bags that came in the kit, named KCG050, KCH075 and KCG100.

I'd like to do something like this:
Grain Bill (70% Efficiency assumed)

6 lbs. - Wheat Malt
5 lbs. - 2-Row Pale Malt
1 lb. - Caravienne Malt

Hop Schedule (27 IBU)

1/4 oz. - Amarillo - First Wort Hop
1/4 oz. - Amarillo - 60 min.
1/2 oz. - Amarillo - 15 min.
1.25 oz. - Amarillo - 5 min.
1 oz. - Amarillo - 1 min.
1.5 oz. - Amarillo - Dry Hop

Should I screw it and just try to brew the "farmhouse" or attempt the gumball head clone?
