Hi all, soon I will have a new setup with 3 20 gallon kettles, but I have an 8 gallon kettle I want to keep and out to use still, is there anything you guys can think of for how to use an extra kettle? I was thinking a grant but it is probably too large in diameter for that.

Use if for BIAB batches when you don't have the need to do a larger batch on the big setup. Or boil crabs in it. Make a big batch of chili and freeze in meal proportions.... The list goes on.

Yeah BIAB would work definitely
I have an 8 gal and dough in with 25 quarts and generally get 4 gal into the fermenter with no sparge and a 60 min boil. I could sparge and get 5, but 4 seems to be the sweet spot for this size. YMMV.
