My Witbier has been in the bottle for a couple weeks already, and one just exploded! Final gravity was right on target with what the recipe called for. Why would one explode?? My only guess is that maybe it had more sugar at bottling than the others? Should I expect more to explode? Anything I can do to prevent it?
 
You could put the rest in the fridge, I would put them in 12 pack boxes too if you have them. Also I think its a good idea to take a gravity sampling over 3 or 4 days to make sure it does not change and it is totally done fermenting.
 
It's been a long time since I had exploding bottles but every time I did the beer was not finished whan I bottled it.
 
I never had any explode but the one time I came close (about one six pack was so carbed all I got was foam) I boiled my priming sugar and threw it into the fridge, had to leave for a little while which turned out to be a long while, and mixed it cold. This in turn caused some bottles to be super carbed whole others were kinda under-carbed. You may also have a gusher bug which you would have been able to notice while it was in the primary/secondary, or after taking hydrometer readings. Btw.... 100th post!
 
Incomplete fermentation, poorly mixed priming sugar, too much priming sugar, infection, weak/bad bottles, etc. are the main reasons for bottle bombs.
