I have vacuum-sealed and froze four pounds of crabapples. Along with this, 18oz. of staghorn sumac. I'm thinking of doing two 2.5gal batches for each with a pale ale base of some sort. I'll let you guys know about the results in the future! If they turn out well, I'll post the recipes.
 
That's awesome, I'm addicted to crab apples when the season comes. I would prefer a lighter beer like a saison or a wheat to let the tartness shine, but I'm definitely interested in hearing your results. Cheers!
