Just wondering what emmentaler cheese should smell like? Mine smells like blue cheese two weeks into ageing..
 
I don't have advice specific to that style (which I intend to make sometime soon) but I notice with all of my cheeses that they go through some very different stages of aromas the first month to two months. If you don't see mold or bacterial growth on the exterior I wouldn't worry about how it smells right now other than to keep an eye on it and make sure you are flipping as needed.
