I have an IPA in the fermenter right now and I used gypsum (1tsp in the mash and 1tsp in the boil) .Batch size is 22L. I have read quite a few articles on gypsum aiding flocculation and now I'm pondering two things :
I used a high floc yeast: 1. Will gypsum cause the yeast to floc out early and not leave enough yeast in suspension for bottle conditioning and 2. Will this lead to a higher FG?
I know whirlfloc has an effect on the proteins and not yeast, but I did not know that gypsum can have an effect on yeast?
