Hey guys,

So a while back I had a problem with my dunkelweizen that I was brewing (didn't start fermenting for 5 days, finally noticed activity after). So, fermentation activity has ceased for the past 4 days or so. My OG was 1.054 and the reading I just took is 1.022.

That said, I'm going to check it in two days to see if it gets any lower. The ABV for this is 4.2 % - does this sound right for a dunkelweizen?

Also, I tasted it and while good, it tastes a bit "light". Will this improve with age in the bottle?

Just for reference, the recipe for 5 gallons consists of:

6.6 lb Wheat LME
1 lb maltodextrin
1 lb specialty grains (steeped before boil)

Danstar Munich yeast
 
5 days is a slow start in my experience, but the gravity readings seem to be in the range that I would expect. I don't know how long it has been in the primary, but I wouldn't rush to get it bottled. I do expect that you would see an improvement in taste after some aging, but suspect that the taste will remain light.

I will be curious to see what you think of it after some additonal aging. Good luck!
