I typically use liquid yeast, but I haven't really found time this week to make a starter for an IPA that I am brewing Saturday. I plan on rehydrating an 11 g packet of Notty instead. My target O.G. is 1.060, and I usually am .02 within that range when all is said and done on brew day. Should I pitch a second packet?
 
Nah, you're good. I routinely use 11g packets of dry yeast (US-05 or S04) on 5g batches of my usual 60 point brews and they always ferment out to a desirable level. I'd put Nottingham in the same attenuation ball park...
