I'm thinking of cloning (well... they give you the recipe, so is it a clone?) this recipe from Dry Dock. My housemate is a big fan of Old Ale, and liked this one.
Here's my take, with a bit more extract to pump up the OG to what they list. I also am thinking of scaling back the bitterness from the original recipe- what would happen if I used .75 oz Golding instead of 1 oz Challenger at the beginning of the boil? (This also works to make the hops in nice 1 oz increments).
Also, don't you have to mash the CaraPilsner Malt? It says to simply steep it, but I want to make sure.
