Well, I just popped the top of my first homebrew bottles last night (American Brown Ale) and even though it had only been in the bottle for 8 days (I know,... another newbie with no patience), it sure was good. Of course, it was under-carbonated, but I'm glad it is drinkable. I'm gonna try another on in a week, and see how it progresses. Also, started my second batch on Saturday (a Belgian Saison), and the airlock was goin' like a smokestack within 10 hours! I understand that Saisons can be a little finicky, but I am hopeful that it goes well.
Thanks for all of the good info on this forum as it really helps.
 
Congrats on your first brew. There's nothing wrong with cracking a bottle from your first batch early as long as you realize it's early.
