Looking to do a clone of Firestone Double Jack and had some questions about this clone recipe I found.

1) It lists out 4 separate dry hop additions of 3-4 days each. Do I remove the previous addition before adding the next?

2) What can I use instead of the Simpsons Caramalt?

3) It says to use Munich. Munich light, dark?

4) What is a good substitute for Amarillo?

5) Is the 2-step mash required? I do BIAB and that won't be very easy to control. I do have a false bottom so I could do my best.

1) yes
2) carapils (dextrine)
3) light
4) use more cascade. citra, if you want an exciting twist.
5) just mash at 151. i'd personally use 8oz of corn sugar, and a bit less 2-row. DJ usually is not malty, but a dry DIPA. dunno why scott uses carapils, either. for body, i suppose.

lastly, use wlp 007, a much nicer tasting and tougher yeast.
