Hi there

Once I've done fermentation for my mead. I want to preserve and clear my mead - so my questions to you:

What do you use preserving? And Why? I was think about using potassium sorbate.
What do you use for clearing your mead? And why? I was think using sodium bentonite as my clarifier.
And in which order should you do it?

Please let me know, so I can learn from you!

I also usually drink mine within a year or two, and don't use any preservatives (Alcohol is a pretty decent preservative in its own right). Also I have several people in my circles that react to sulfates so I don't use them.
 
I use K Sorbate for preserving and stabilizing and only use a cold crash and some time for clarity. Might invest into a 1 or 3 micron filter sometime to hasten things just haven't dropped the cash.
