Hey All,

I don't brew many Belgian beers generally but I have tried my hand at a few. I am in the process of trying to make a Golden Strong. I have some candi syrup left over from a Tripel I made about a year or so ago that I used half of and vented the air out as best I could. I also got a couple of packs from the LHBS. The packs from the store I noticed when I arrived home feel like they have crystallized a bit in the package, similar to what honey does when it ages. I'm just wondering if this syrup can go bad and get oxidized like DME/LME can or am I worrying too much about it? Thanks.

Well what would it taste like if it was "bad"? I'm trying not to open them because if I do then I probably can't take it back.

The only thing I know that could be wrong with it is if it's moldy. Sugar doesn't go bad. But if there was something wrong with it, I'd take it back whether it was opened or not.

That's a good point, thanks for the help. I just thought it was weird that it was crystallizing but guess that's not a huge deal

It should be shelf stable. I've used even more delicate ingredients like LME 2-3 years old.
