I have a Midwest brewer kit for their Coriander Lemon Weiss that calls to add lemon zest to a beer racked to a secondary.

Any foreseeable problems by just keeping it in the primary and adding the zest (once fermentation settles down of course)?

not at all. all the kits (that i've used) still use secondary, but i stopped using it. the main point in waiting untill secondary is to keep active fermentation from driving off the flavors. once it's finished you can add the fruit without risk of loosing flavors (wether you secondary or not)
