I went to measure my grain out today for the first time on a new recipe and put a 3lbs bag of Mutons Extra Light I had just bought from LHBS and it weighed only 1lbs. The grains I bought weighed just what the package said. Am I missing something?
 
if you havent used DME before. A 1lb bag will fit in the palm of your hand, a 3lb bag wont.
 
it doesn't fit in the palm of my hand but I know my scale is good down to the 10th of a lbs

If you measured by putting the whole bag on the scale and it was hanging over it might have bound the scale and read false.
 
You can add extract after fermentation has started. Leave a half gallon space. Buy some more extract, boil with half gallon of water for 10 minutes, cool and add to fermenting wort/beer.
 
I am just at the grain steeping stage, I wonder if I can keep it until tomorrow and go to the LHBS and get the right amount - I have not added the DME yet
