I only make 5 gallon batches, with a 5 gallon (20 quart) brew pot. I have no idea the percentage of fermentables. What is standard? I do want to do AG at some point, but I live in an apartment so I'm limited to what I can do just by how much equipment I can store right now.

PM recipes vary wildly. There isn't a "standard."

I recommend going with the 10 gallon cooler so you have room for expansion later. If you have a 10 gallon mash tun and a 5 gallon kettle, all you need is another 7.5 gallon kettle to do 5 gallon batch sparged all grain brews.
