Recipes always recommend delicately flavored honeys for the subtle floral nose they give to finished mead.

What happens if you make mead with a stronger flavored honey?

And is there a list somewhere that ranks honey varietals? I couldn't find such a list, but maybe my googling skills just aren't with me today...
