Had some unused date molasses was wondering what to do with, so decided to give it this try:
6.5kg date molasses (75-80 brix) diluted with 13 litres of lemon/ginger water.
7.5 litres of lemon/raisin semi-wine.
4 litres of slurry from previous ale batch.
No additional sugar.
Some dry hops in the primary.
No boil, pitched at 17-20 deg C.
Total batch volume 30 litres. Starting gravity 1090.
Didn’t boil the semi-wine either, so there’s some residual alive wine yeast in it.
What do you think this will turn into? Will it turn out to be some kind of beer?
What additional spices would you recommend?
Cloves?
Bay leaves?
Dry rosemary?
Black pepper?
Cinnamon sticks?
Some dry lavender???
Red hot chili pepper???
Some dry ginger powder or fresh ginger?
Maybe it will taste like Jaegermeister beer?
