I am considering brewing a big imperial stout with an OG 1.100. Is nottingham an appropriate yeast for such a big dark beer? I would double pitch of course but am just curious if it is even right for the style.

It should work fine (2 packs for sure). I use it for all my ales (stuck in my ways, I know.)

If it gets over 65 degrees watch out for a possible volcano, for sure use a blow off in any case.

Notty is one of my goto yeasts and has never let me down. I agree with boscobeans- two packs to git er done!

I prefer Notty really low...60-63 at most. Its practically clean at this temp. But no matter what temp I have used...the blowoff is always outrageous. I've been using 05 lately just to avoid them.
