Cutting Oversweet Ale with Hopwater?

So I under-bittered an ale and, while it's drinkable, it's also quite on the sweet side. I was thinking of picking up an ouce of high-alpha hops and boiling them for an hour in a couple gallons of water to extract some bitterness and then just chilling the bittered water in the fridge.

My thinking was that if I could make a jug of sufficiently hop-bittered water I could then add a couple tablespoons to my sweet beers as I open them and maybe take the edge off a little.

Has anyone tried this before? Is there any reason that this wouldn't work?

I haven't tried it, but it should work. I have hopped an under-hopped batch in the fermenter, using hop tea. That works.

Thanks for your opinion. Seems like it should do the trick, but I just wanted to know if I was overlooking something that would foil my plan.
