Customizing 30 gal Aluminum Brew Setup

I have researched plenty but want to run a design by some peers to ensure I eliminate any mistakes or bad decisions.

Existing Brew Stand: 2-tier setup with 2 high output burners. The upper tier also has a designated spot for the MT without a burner.

Kettles: Three new 120 quart (30gal) Thunder Group Aluminum pots. All 3 have no upgrades at this time.

Mods before next brew (Feb 2015). All comments or feedback is appreciated:

- Weldless thermometer on each kettle

- Weldless Site glass on each HLT and Boil Kettle

- 18" RIMS Hardware Kit Cam lock setup from Brew Hardware.
- 5500 watt heating element
- Thermowell
- Johnson or Thermostar controller

- Camlock fittings for the following:
- Steel head pump in/out
- Each kettle low point with 3-piece ball valve
- MT High point connection
- Two silicone hoses with high flow elbows
- Two short length hoses for plate chiller (currently has garden hose & barb connections so I need to convert barbs to camlocks)

- Dip tube for MT False Bottom

- Custom False Bottom. With perforated stainless steel ~21" diameter ( unsure how to build a stand to rest off bottom and how high)


What am I missing? What should I consider or remove?
