If you want to grow more than one type of hops, how do you keep them from cross pollinating and creating hybrids? Do you just have to ensure none of those pesky male plants survive?

If you buy rhizomes from trusty sellers you don't have to worry about having male plants, they sell only female plants, or rhizomes...
If you plan to grow from seeds you will not know what sex your plant is, but also not know what type of hop will be, because hops grown from seeds don't keep the parent plant characteristics.
Look for good rhizomes and you will be able to grow as many types as you want.

PS: You need to be sure that your neighbours don't have male hop plants :)
