5 gallonish batch.. he sent this to me wanting to brew it. I think it is way too much carapils and crystal. He obviously wants a higher gravity beer but I'm thinking to dump some of the carapils and crystal and use some dextrose. Thoughts?!

2 LB of Crystal 60L
1.5 LB of Cara-Pils
1 LB of Aromatic Malt
US-05 yeast
1 oz of warrior 60 min
1 oz of citra 20 min
1 oz of Cascade 15 min
1 oz of Cascade 14 day dry hop

1.068 SG
69.9 IBU
13.9 SRM
7.5% ABV
 
I agree with you. I'd cut all specials by at least half:

0.5# C60
0.5# Aromatic (I love this in IPAs, btw)
and I never use CaraPils so I can't comment on that, but 0.5# seems more reasonable.

If he wants to boost the gravity, plain sugar is a great choice - helps finish dry. A pound of wheat would also be great.

Also, and this is just personal preference, but I don't love plain 2-row as a base malt. I prefer a healthy dose of pale ale malt or munich/pilsner/vienna/MO, etc. But I like malty IPAs.

EDIT: I'd also bump back your hop additions. Maybe do 15 Citra and 5 Cascade, or flip those two. And consider upping the dryhop (maybe another 1oz of Citra for 5-7 days)
 
Yup, I'd agree. I don't think you even need to add simple sugar (I like it in IIPAs, though), but you could. If you want more gravity, I'd just up the base malt and mash low. My IPAs mash around 148-149F. You definitely need more late hop additions, though. I imagine with just a 20 and 15 minute addition, you'll end up with an IPA-strength beer with pale ale levels of hop aroma (even with a dry hop). I like to hop burst my IPAS, with 20, 15, 10, 5, and flameout additions, but moving your additions to 15 and a 5 could work well if you just want to do 2 or are limited on hops.

That one looks a lot better. Personally, I'd flip flop the admiral and citra adds, I think citra's a much better aroma hop. Either way, your recipe looks great, I'd drink it! :mug:
