Looking at designing a strong sweet stout for Christmas. I'm trying for a honey apple pie flavor. This is only my 3rd brew (extract), so I'll take any and all criticism.

Fermentable:
  • 6.6 lb - Light LME
  • 2.21 lb - Light DME
  • 16 oz - Honey (added at 5 min boil time)
Steep:
  • 14 oz - Crystal 45L
  • 15 oz - Roasted Barley
  • 20 oz - Special Roast
Hops:
  • 2 oz - UK Fuggle, 60 min boil time
Spice:
  • 2 cinnamon sticks (added at 2 min boil time)
  • Apple Extract (added at bottling, not sure how much)
Yeast:
  • Wyeast Irish Ale 1084
 
The honey will completely ferment leaving very little, if any, honey flavor behind.
Add some honeymalt to your steeping grains. Also, add the honey after primary fermentation is done.
 
I hadn't thought of honey malt. I did some digging and found this:
It is pretty intensely sweet, and I wouldn't quite describe it as honeyish on it's own.
I will say that if you add honey to a beer brewed with honey malt, you will get a prominent honey flavor. The malt provides the sweetness that ferments out of the honey, and the honey provides the floral aromatics that the malt doesn't have. Either on its own doesn't do it.
This seem like a reasonable suggestion?
 
I went ahead and updated the recipe to include some honey malt and honey. I like the idea of this recipe, but being so new at brewing, I wasn't sure if I was overcomplicating it.

Fermentable:

  • 8 oz - Honey Malt

Spice:
  • 2 cinnamon sticks (added at 2 min boil time)
  • Apple Extract (added at bottling, not sure how much)
Yeast:
  • Wyeast Irish Ale 1084
 
After conducting some more input, I decided to change the type of beer from a sweet stout to a scotch ale. It seemed to fit my needs better, with a higher chance of holding on to some of the flavors.
