Hello everyone!
Fyi, just started brewing ciders this fall with all the great fruit crops. Great year canning and freezing, so I decided to make a cider and started doing more. Thank you all so much for the info posted! It has been a big help.
This is my batch 5, tried using other fruit from the yard. 10/27
2 1/2 gal pear juice picked after light frosts
1/2 gal crabapple juice picked after frosts
1 gal apple juice Cortland and Yellow Del.
Juiced in Breville Juicer
6 cups sugar
1 Tsp pectic enzyme
1 Tsp year nutrient
OG 1.042
pH 3.6
10/29 cote de blanc pitched
Racked after 1 month
Racked again 1 month
Bottled 10 days later
SG 1.002

So how did it come out? Looking to refine & try again this fall?

I've been wanting to make a dry, tart cider & thought using crab apples might be a way to get there. I'd love to hear more about your process & how you made your pear & apple choices.
 
Well the first tasting was very off. After letting it age more it has mellowed nicely. I checked back on my notes and I noticed that I left out I added some malic acid at bottling. It is very well carbed, and at 9% it has a smooth taste with a dry slightly bitter after taste.
