Hi

Just about to start a Coopers Ginger Beer. The can says to leave in the fermenting bucket for 6 days....but all previous beers I've done usually takes around 21 days.

Should I follow the 6 days or my normal 21 days?

I know if I keep checking after 6 days I could contaminate it.

Cooper's ginger beer can't be sold over here,due to some non-EPA allowed chemical in it. but generally,being an ale,I'd let it ferment down to a stable FG. Then give it 3-7 days to clean up any by-products of fermentation & settle out clear or slightly misty. then prime & bottle. I wish we could get the Cooper's ginger beer over here. I'd like to play with adding it to a partial mash with certain spices for the holidays. It'd go great with carrot cake & the like. Or sesame cake,which goes back to the ancient Egyptians.
 
I've done this kit once and was able to bottle in two weeks. A lot of good reports from my friends for this kit.

I did this kit recently and gave it two weeks in the FV and two weeks in bottles and it tastes great.
