Conical question

I am thinking of getting a stainless conical, and was wondering if something would work.

If I use a 12 gallon fermenter and only put 5 gallons in it, is it okay?

Also....the same question but with a different scenario:
I currently brew 5 gallon batches, but have a 15 gal kettle. I was wondering if I bought a 12-ish gal conical and brewed 10 gallons...fermented, dumped, and racked out 5 gallons to the keg and left the rest for a couple weeks to age...would it be okay? Or is there a too much headspace issue there? I only have one keg right now and it made me curious. Seems like it would be fine.
I will get another keg, or a bigger one soon, but it made me wonder.
Seems like it would be a good way to test how aging improves the same beer:confused:

I'm not an authority on this but I'm pretty sure you do not want to brew 5 gal and put it in a 12 gal fermenter. I can't imagine all that head space is a good thing.
