I have about 4 gallons close to finished with primary fermentation. I have the option of conditioning either in a 5 gallon glass carbon or splitting between a 3 gallon food grade plastic fermented and 1 gallon glass. Curious if it matters with the question of air space in 5 gallon or plastic being an issue for long term conditioning. Thanks.
 
I condition most in the serving vessel. My SOP is to primary for 3-4 weeks( depending on OG) then keg. The only ones I don't do this with are the ones that go in a barrel for 6-8 months,then keg or bottle.
 
Another thing to consider is to check CL or other sites for one gallon jugs. There is a guy here who sells bottles etc. he always has glass 1 gallon jugs and he sells them for $2. Or if you check health food stores you can sometimes find apple juice in 1g jugs.

If you split your mead into 4 jugs, it’s a great way to experiment with tinctures or other flavorings.
