So I know that aging beer yields great results...let me know what you all think here:

I have a pale ale (sierra nevada clone basically) that spent 10 days in the primary and has now spent 4 weeks in the secondary. I plan on kegging after its spent a solid 5 weeks in the secondary.

So my question: If I cold condition for a solid 1-2 days, and then keg it after 5 its been in the secondary for 5 weeks, and there are still some flavors that need to mellow out, will just letting it hang out in the fridge/kegerator allow for conditioning to continue?

Guess I am just wondering if conditioning continues once the beer it chilled down to drinking temps.

Let me know what you think.

Thanks

Yep. It will continue to age/condition while in the keg even at cold temps. Although it sounds like you won't need much more conditioning on that one to be a good beer.
