So how do you guys deal with it? My last brew I had 10g in my sanke fermenter in my chest freezer, after a while there was tons of mold on the walls and bottom of the freezer. My brew wasn't infected but it's still scary. Any ideas to minimize this?

How often are you opening it? That could be part of your problem? You can also look into some food safe desiccants (not sure if any have "proximity toxicities"), or just put a tub of rice in there.
