My a/c went out and I had to put 2 gallons, that are in the clearing stage, in the fridge. One is on its last rack before bottling and the other on its 3rd rack. Do I take them out and continue on or do they have to live their entire life in the fridge?
 
Why exactly did you put the wine in the fridge?
Are you cold stabilizing the wine?
Normally, you cold stabilize white wine for 2 weeks as close to freezing as possible without freezing your wine in order to trigger a crystallization reaction between the potassium and the tartaric acid which combine to form crystals or "wine diamonds". This doesn't hurt the wine at all with the exception of a possible shift in PH, but, people tend to get jumpy when they see any sediment in the wine bottle, or worse off, their glass.
There is no need to cold stabilize red wine.
