I am just curious to know if anyone has ever made a coffee wine? I looked on here and could find a recipe. I am assuming it can be done.

The recipe is quite simple -

15g instant coffee
1.25 kg sugar
15g citric acid
4.5 litres water
1 teaspoon ammonium phosphate

I haven't actually tried it myself but I've been told its quite dry

12 days worth coffee grounds , empty every day in to skippy container (in freezer).
boil in one gallon & 2 cups of sugar (strain)
add tsp acid
one can grape frozen
set for 2 months(rack after 2 weeks)
gonna bottle this week

e 1118
very strong

Used 2nd run gounds cause last time had way to much oil .And added grape for body, no grape flavor , coffee way strong in tatse and smell . Last time , thin oily mess. Should have saved it , could have used it to induce vomiting. hahahah

If I were to make a "coffee wine," I think I'd rather use the coffee fruit than the coffee bean.

I've only tried the Kona Red juice, which has other fruit in it, so I'm still not certain exactly what the true flavour of the pure fruit is, but what I've tried was pretty tasty. I think the biggest drawback for using coffee fruit juice/extract/concentrate would be the cost; the stuff is pretty expensive.
Might be worth it to ferment a 1 gallon batch though.
Regards, GF.
