Does it matter how long the CO2 hoses are? I know you want the beer out long but did not know if the CO2 hose length mattered? How much space would you give between taps? I will have three taps!
 
No, CO2 hose length doesn't really matter. Just do whatever length you need for whatever set up that you'll have.

this is true, but then add some extra length so you can move things around as need be. how you initially set things up is not necessarily how it will be in two or three years.
the tubing is cheap, and this way you don't have to mess with things again, and again and again

Yeah... also every hose should be at least a little bit longer than you need anyway, so that you can move stuff around without having to disconnect things.
