Completely closed fermentation, start to finish. OG and FG hit perfectly.
10 lbs 2 row
1 lb chocolate
1 lb crystal 80L
1 lb roasted
12 oz black patent
1 oz fuggles 60 minutes
Safale yeast
After 3 weeks, impossible to gas off. super carbed beer foamed out of gas post.
Decanted into ale pail. STRAIGHT foam start to finish.
Beer gassed off for 3 days, slow bubble in air lock.*impossible to say, but I doubt much fermentation happened, if any at this point. Very little gas for super carbed beer to flat*
After 3 days of no activity, FG stable and where it should be (yes I dusted off the hydrometer for this one) racked into keg and fast carbed.
Plenty of Head, head retention about wht would be expected. Flavor seems right on to me.
Taste tested:
BMC drinker: Yummy! Tastes like guinness........
Beer geek(not me ): tastes good, no off flavors, a little dryer than expected but good
Me: Spot on as if I had fermented with an airlock. (I assumed that I might be biased)
I think in the future, maybe a slightly early closed secondary might be good. carb up the beer slightly, hook up gas and toss in keezer after 2 weeks.
