I brewed a Brut IPA and it just wouldn't drop clear. If it were a NEIPA... It would be a beautiful beer with the color, brightness, etc... However the intent was a Brut with high clarity. Here's the bill...
10lb 2 row
5lb pils
1lb flaked rye
Some hops to bitter (36 ibu)
5oz key lime juice in the boil
WLP001
Amylase enzyme at pitch
6oz aroma hops
.25 lime zest
Cold crashed and fined with gelatin

It never dropped clear... Always kept a haze.
Color is fantastic. Taste is really good. A great beer but I'm wondering why I couldn't get it clear in the cold crash with gelatin.
Is it the flaked rye?
 
Idk... Could be. I never have use any citrus or anything like that before. I have use rye before in a rye IPA but not as much and it was clear. Maybe a combo of both.

Heck I'd drink that . Looks good ! .....I know what you mean though. You wanna know why, and if a beer is supposed to be clearer that's what you want . Anyhow i bet its delicious.
 
My IPA has a haze to it as well . I used flagship , knowing it has low - med flocculation. I cant cold crash yet .
