I've got a really good Baltic Porter recipe that I've tweaked over the years. I've got one 5.5 gallon batch that's about ready to be kegged. I am however planning on adding some vanilla bean and cinnamon sticks to it. Having never really used either, I'm curious as to how much of each and for how long you've all used them in the secondary. I figured 3/4 of the vanilla bean would suffice for a little flavor but not too overpowering, but I have no idea how much cinnamon would get noticeable, but again, not overpowering flavor. Also, would a week in the secondary be enough time for each spice?

I used 3 vanilla beans in my 5 gallon Baltic porter batch and some people complained that it was too much, but I thought it was good. So maybe 1 bean? I put my beans into secondary for 9 days.
