I just started brewing and one thing I would love to do is also make my own cider, but I have yet to see any real books or information on the process. Where is a good place to start?

Start like this:

5-6 gallons of preservative free apple juice.
Nottingham, Lalvin EC-1118, Safale S-04, Champange take your pick
1 lb brown sugar, boiled for just a minute or two

Ferment, carb and bottle just like you would your boiled wort.

Read the sticky in this forum start to finish. It'll take you a day to read and a week to absorb but is pretty good at covering everything cider making related. The sticky starts with a pasteurized how to but read all40 pages add there is just about everything on there

This book: http://www.amazon.com/dp/1580175201/?tag=skimlinks_replacement-20
While reasonably useful, I find to be a bit lacking on details, but it's not a bad start.

There is always this cider site:
http://www.real-cider.co.uk/how-do-i-make-my-own-cider/
It has a bit of useful info & more than a few links to other useful sites.

And of course there is always the most awesome site you're on right this minute: HBT!
The cider forum here really is chock full of useful info & recipes, tyhen there's the actual cider recipe section. I just gotta say, this site really does ROCK!!!
With posts like these:

and
https://www.homebrewtalk.com/f32/results-juice-yeast-sugar-experiments-83060/
and the recipe section:
https://www.homebrewtalk.com/f81/

You're bound to find just about any recipe, any method, or an answer to almost any question you may have about cider making & more.
Regards, GF.
