Brand new to this
25L apple juice was pressed on 13th September
Yeast added and all started fermenting
so 5 days later the bubbling has stopped
Is this too soon do i need to add more yeast
Tested SG and its 1000
Wanted a sweeter cider if possible
what are my next steps please
have 5 Demijohns clean and ready

Any advice

Thanks

Don't rush it. It might be finished or it might not be. Let it sit for perhaps 5 days more and check again. When bottling/kegging and you think it's too dry there's always the possibility to back sweeten your cider, I've only done it a few times but I've used lactose and other unfermentable sugar. Once I pasteurised the cider and added fresh juice/must.

What should the gravity be when its ready
I was going to Siphon into the 5L Demijohn
then leave with Airlock
I will leave it a week and check again

Thanks

  • Sweet (Doux) >1020 Oe
  • Semi sweet (Demi-Doux) 1015-1020 Oe
  • Semi dry (Demi-Sec) 1010-1015 Oe
  • Dry (Brut) <1010 Oe
Edit: This is of course assuming the yeast in the bottle won't just eat the sugar. There are multiple ways you can prevent this.
Personally I'm gonna make a dry cider, and then I'll experiment with xylitol (artificial sweetener) on some of it.
