Here is the one I have done the last few years. It's pretty good. I use a lager yeast but you could use a clean ale yeast and it would be almost as good.

Ingredients
Amt Name Type # %/IBU
4 lbs 8.0 oz Munich Malt (9.0 SRM) Grain 1 42.1 %
3 lbs 8.0 oz Pilsner (2 Row) CN (3.0 SRM) Grain 2 32.7 %
1 lbs Caramel/Crystal Malt - 30L (30.0 SRM) Grain 3 9.3 %
1 lbs Wheat Malt, Ger (2.0 SRM) Grain 4 9.3 %
3.2 oz Chocolate Malt (450.0 SRM) Grain 5 1.9 %
8.0 oz Honey (Orange Blossom) (1.0 SRM) Sugar 6 4.7 %
1.00 oz Hallertauer (Tradition) [5.30 %] - Boil 60.0 min Hop 7 17.8 IBUs

I used Northern Brewers Saison de Noel Limited Edition Extract Kit, and added 2oz. of Teavana's Spice of Life (a tea that reminds me of Christmas) to the boil.

Saison de Noel

Spice of Life

You could probably add that tea (or a conglomeration of those spices you design yourself) to a simpler Ale and come up with a good Christmas flavor.

Look for the Breckenridge Brewery Christmas ale recipe. I'd post a link if I still had it. It is one of my favorites, and is very well balanced and easy to drink.
