Hey guys so I was going for a chocolate oatmeal cookie taste. Any thoughts?

Pale 9 lbs
Chocolate 8 oz
Black 4 oz
Crystal 40L 8 oz
Crystal 90L 6 oz
Roasted 8 oz
Flaked Oats 2 lbs
Brown Sugar 8 oz
Cocoa Powder 8 oz
Galena 0.75 oz (60 min)
White Labs British Ale
Vanilla Extract 1 teaspoon (primary)

Was gonna toast the oats until they start to smell like cookies like what randy mosher suggested. Mash around 154 for 60 mins, double batch sparge, 1 hour boil, 5 gallon batch. I was thinking of cold steeping the roasted barley in the sparge water before heating it but I'm back and forth on it. Any suggestions or tweaks?
 
Google "Bugeater"s oatmeal cookie amber". i remember seeing the recipe somewhere. this guy knows what he is talking about and you can probably pick up some ideas from this recipe.
