Chocolate nibs unexpected flavor

This is my first time using nibs(4oz nibs in secondary). I racked my porter onto nibs and 2 vanilla beans about a week ago. I took a small sample today and the flavor is drastically different than it was before. Out of the primary the porter was still sweet and quite delicious, but now just 7 days on the nibs it has turn earthy, and roasty. Should I have expected this or am I getting off flavors from something? Or is my rookie palate mistaking the chocolate flavor from the nibs as the roastiness and earth tones? Its almost like I've already added the coffee too it...that I had planned at bottling.
