Tasting Notes
...
its not even halfway through June and I am already thinking about holiday beers. I would like to have this looked over to see if everything looks right. I have only been brewing sense Jan of this year and I think I have come a long way, but putting together a recipe is very new. so I would like to try something of my own and not just a kit. so here it is:

mash for 60 min @ 152
8 lbs maris otter pale
1 lb chocolate malt
1 lb caramel 80L
8 oz roasted barley

.4 oz of magnum @ 60min
.5 oz of northern brewer @ 30min
8 oz lactose(boil 10min)
8 oz cocoa powder(boil 10min)

primary fermentation for 2 weeks then rack to secondary and add
8 oz of cocoa nibs
3 lbs of cherry puree
secondary fermentation for 2 weeks then package.
any help with this would be much appreciated. I plan to brew this in august along with a pumpkin ale and give them plenty of ageing time till the holidays. cheers!
