So I am doing a quick cherry wheat beer that should be ready for Christmas. It's going to be a smaller batch, maybe 3 gallons?

I have a 1 1/2 pounds of dried cherries that I'd really like to use, but don't know how to incorporate them. Do I just stir in boil the last 15 minutes, dice and put in secondary, or what? Any suggestions to maximize cherry flavor would be helpful. Thanks!

Be very very very careful with the amount of dried fruit you add to your wort as dried fruit is going to be much more concentrated in flavor, higher in sugar per pound and much more tart.

Okay, good to know. Any suggestions on what is a good amount for a 3 gallon batch? And do I just place the dried cherries in the fermenting bucket?
