Made a cherry mead. I used 1.2 G of raw buckwheat honey and 8 lbs of fresh then frozen cherries. OG was 1.112 I used lalvin ec 1118 dry yeast and am doing the staggered nutrients and have been degassing the carboy. Seems to be chugging along nicely. might add a vanilla bean to the secondary

Is the "1.2G" 1.2 gallons? all buckwheat honey? If so, that's going to be some strongly flavoured melomel. You must really like buckwheat honey!
Looks & sounds like you've got a healthy fermentation going.

Yup. 1.2 gallons. I'm pretty sure it's buckwheat but not certain. I got a large amount of honey free from a farmer but didn't get any info from him. The honey is pretty dark colored so that's why I thought buckwheat but I guess it could just be wildflower? ImageUploadedByHome Brew1406627252.870416.jpg
 
It certainly looks like buckwheat honey to me. Buckwheat has a very strong flavour. Some have likened it to molasses, others say it has a "barnyard flavour." I always thought it had a sort of "ripe hay" flavour to it & maybe just a hint of molasses. I've got a few pounds of it in the cupboard, waiting to be mixed with some clover honey & fermented.
