So, I know that apfelwein is supposed to age several months, but I tried a sample after about 1 month.

No apple whatsoever, just tasted like the most buttery chardonnay ever.
Yuck!

2 weeks ago, this tasted great, but the last couple weeks have really brought out some butter in int.

Obviously i'm not done aging it yet, but man it tastes bad!

Ya think it will mellow out with time?

Dangit. I opened this post hoping to hear about someone making wine with swiss chard. Oh well.
