I don't really have experience with meads, but I don't think you want that much air space especially since meads sit for so long. Most homebrew shops sell one gallon glass jugs that work great for meads, even have special caps that accept an airlock. I'd pick one up for $5 it would be worth it instead of tying up a five gallon fermenter for a long time.
 
The 1 gallon jugs are really cheap.
