Carbonation Woes

I just finished an American LagerNot which turned out OK, not great.

My question, however, has to do with carbonation: the first bottle I opened overflowed almost instantly, leaving froth and foam everywhere. The second bottle had a nice foamy head. The third, and each successive bottle, has had a distinct bite, but no head to speak of, and not much in the way of visible carbonation.

Can anyone explain the discrepancy? Is the bite I'm getting from the remaining bottles due to carbonation, or something else?
