I just cracked open my first bottle of my new batch today - Brewer's Best Hop Nog 2009. Surprisingly, it is flat. There is some carbonation there, but the amount that you would find with Fat Tire...

I swirled today to disturb the sediment. Past that, is there anything else I can do? The presence of carbonation means that the yeast were doing their job, right?

How much corn sugar did you use, how long has it been in the bottles and what temp is the room your bottles are being stored in at?

90% of the time i have had issues with carbonation it is usually because i let the temp of the room my bottles were in fall too low. If you can't keep the temp up then wrap those things up in some blankets or towels.

I am not sure of the amount of corn sugar... just what the kit came with.

As for temperature... I keep my house around 69. too cold?

Is the beer reconcilable?

I have a Simcoe IPA thats been in the bottle for 14 days and still has no carbonation. There is a slight hiss when opened and the beer does taste substantially less sweet than before going into the bottle. Will these carb up given enough time? None of my other beers have taken this long to show physical signs of carbonation.
