I have an idea and would like to make a caramel apple wine. I have figured out a recipe and need about 4 pounds of caramelized sugar. I've looked into making it, but I am no good at heat control when I cook. I don't want to burn the sugar, or have my kitchen smell like burnt sugar. Does anyone know where I could purchase sugar that is already caramelized? I've looked all over online and have been unsuccessful.

I don't want to use caramel candies because of additives, and such that may throw off my brewing calculations.
 
All I've found is Caramel syrup which is used for Ales. And its not really caramel. It says it has notes of Caramel, among other things like toffee, chocolate etc.
